So how's Penny the greyhound doing?

Penny's been off the track and in her foster home for almost 4 weeks. Her transition has not been as smooth as most of the greyhounds, but then again she is a little younger (think "teenager"). During these first two years of her life, there have been only four constants in her life: a time to eat, a time to potty, a time to sleep and a time to race. She had no idea what to expect when she was told she would live in a house and be someone's pet. Now she has experienced "freedom" (think "teenager goes to college").
So here's the latest update from Penny's foster Mom.
"Penny is definitely a morning dog. In fact her morning starts around 4 am with her pacing and whining. Fortunately for me, I too am up early (not quite that early, but hey who's counting?) Penny is the first greyhound I have met who has an extensive vocabulary. She has an extremely high pitched voice - she is a girl after all. She is very outgoing and probably should not be around small children--just because she is extremely rambunctious. When she gets excited she is a jumper (when you come home, when you bring food out etc.) We are working on this behavior but we haven't made much progress. The quickest way to calm her down is to rub her tummy. She is not very aware of others around her - the other dogs have been stepped on and pushed out of the way tons of times. She has been giving kisses, but she is so hyper it is more like a tongue attack. She is still following us wherever we go in the house but I can tell she is gaining confidence. She is a quick learner and is showing lots of progress in staying away from people food, but she slips every once in awhile and if you aren't careful you end up with greyhound nose seasoning in your food. Her stair climbing ability is improving, but again she is full of energy it can be quite eventful to see her barrel down the stairs. Penny is a wonderful dog who reminds me so much of Bella when she first came here. Bella is the best dog now and Penny will be too. She's going to make someone so happy."
